Method:
1. Heat the olive oil and butter in a pot. Once foaming, add the spring onions and potato. Gently fry without coloring for about 5 minutes. Stir in the stock, bring to a boil, and simmer for until the potato is tender (10 minutes).
2. Stir in the peas, bring to a boil again, then cook until they are just done (3 minutes). Remove the pot from the heat, add the mint leaves, and blend in a blender or food processor until smooth.

• 5 sprigs of spring onion- sliced
• 1 large potato-cubed
• 5 cups vegetable stock
• 1.25kg frozen petits pois
• ½ small bunch mint leaves
