Pea and Mint Soup

The perfect winter dish!

Whipping up a cozy bowl of pea and mint soup! The vibrant green peas and fresh mint create the ultimate comfort food. Plus, it's easy to make – just toss everything into a pot, blend, and enjoy the magic✨ 🫛

Method:


1.⁠ ⁠Heat the olive oil and butter in a pot. Once foaming, add the spring onions and potato. Gently fry without coloring for about 5 minutes. Stir in the stock, bring to a boil, and simmer for until the potato is tender (10 minutes).


2.⁠ ⁠Stir in the peas, bring to a boil again, then cook  until they are just done (3 minutes). Remove the pot from the heat, add the mint leaves, and blend in a blender or food processor until smooth.


Ingredients:


•⁠  ⁠1 tbsp olive oil

•⁠  ⁠Knob of butter

•⁠  ⁠5 sprigs of spring onion- sliced

•⁠  ⁠1 large potato-cubed

•⁠  ⁠5 cups vegetable stock

•⁠  ⁠1.25kg frozen petits pois

•⁠  ⁠½ small bunch mint leaves
